Simple Create Your Own Muffins

A great muffin recipe from our friend Amy Nolan. Takes 10 minutes to make, toddlers and preschoolers can pour, stir and fill up the muffin tins.

Preheat oven to 350 degrees.

Mix together in a large bowl:

2 cups spelt flour
1 1/2 cup oat flour
3/4 cup Sucanat
1 Tbsp baking powder (aluminum free)

Add each to the dry mixture and mix until just blended:

1/2 cup canola oil
1 cup almond milk (or rice or soy milk)
1/3 cup applesauce or fruit puree of your choice (smashed bananas, pear, etc.)
2 tsp pure vanilla extract

Add ins: You can stir in fresh or frozen berries, ground flax seeds, slivered almonds, whole oats, millet, etc. to create your own combination.

Bake for 10 minutes for mini-muffins and 20-25 minutes for bigger ones.
